No Bake Protein Bites


So, I've been wanting to make these since my sister told me about them a couple months ago. Then, my sister in law made these and brought them to the beach, and they were so good! You guys know I am all about simple, easy, and healthy, and these protein bites are all three. 

I actually made these the evening before we drove to Ohio. You know how crazy your house is the night before a long trip, right?! If I can make these in the midst of that chaos, I know you can whip these up in no time. 

You can probably find the ingredients already in your pantry. The basic recipe consists of oatmeal, peanut butter, honey and chocolate chips. I also added vanilla, coconut and ground flaxseed. Add or omit whatever you like! Mix the ingredients all together, refrigerate for at least 10 minutes and then roll into balls. I've read that it's best to keep these in the fridge for up to a week, but I they would never last that long in my house! 


Here's what you'll need:
1 cup of oatmeal (I used quick oats)
1/3 cup honey (or agave nectar)
1/2 cup of peanut butter
1/2 cup chocolate chips
1/4 cup ground flaxseed
1 tsp vanilla extract
Handful of coconut


Mix, refrigerate, shape, enjoy!

  1. I always tease my daughter about the healthy foods she eats. I am a creature of texture. Wasn't sure I would like all the grain in them except for chocolate chips. Yum. Well I got it in my mouth and to my surprise they were good. And imagine that healthy. See you can track and Old dog a new trick!!
