Paleo Pumpkin Walnut Muffins

So, after eating clean and green for three weeks, I was determined to continue a healthy lifestyle of fruits, vegetables, nuts, seeds, and lean protein. But, come on, we all need a treat every now and then! A friend of mine, who is a beast at incorporating whole foods into her diet, shared this recipe with me. She's also the one who got me into using Young Living essential oils, so I trust her judgment for quality choices and recipes.  

This was my first time using almond flour and almond butter in a recipe. I found both at our Walmart Neighborhood Market. So, basically, these muffins are gluten free, they have no butter or oil, and are super moist and delicious! This recipe made two dozen, so for one dozen, I added chocolate chips for my neighbors and the family!

So, you're going to grab almond flour, canned pumpkin, walnuts, almond butter, baking powder, eggs, honey, cinnamon, pumpkin pie spice, and salt. That's it!

Measure the ingredients, then combine and blend in a large bowl. This smells so good!

This recipe makes two dozen, which is plenty to snack on and still give some away!

For the second dozen, I add chocolate chips. My boys loved these muffins!
